Simply butter, as good as butter!

Butter made with fresh cow's milk, which is carefully and skillfully worked without additives to give natural fragrant goodness, providing a touch of extra taste for any dish or recipe.
Can be also used to produce clarified butter or flavored butter.

The process of butter's clarification, obtained by using heat, allows to removes any problem relating to the content of water and protein in the butter.
In this way we obtain a purer and higly versatile product, which is widely used in different preparations and cooking techniques around the globe.
Is also known as: Burro Chiarificato, Butterschmalz, Drawn butter, Ghee

Texture, color and taste may slightly vary according to the season of the milk from which the butter was made and the extent of cooking.
Store in a dark place, refrigeration is unnecessary.

It is a fresh product, white in color, with a soft, creamy texture and a sweet taste of milk.
Has important nutritional properties: high in protein and low in fat, is characterized by its high digestibility and the low calorie intake.

Culinary delight, tasty and palatable, Ricotta is a popular ingredient in many Italian recipes like Ravioli, Lasagna, Cassata, Cheesecake, just to name a few.

Store and refrigerate between 1 to 4C, on a plate covered with plastic wrap, making sure to remove the water in excess.

Mozzarella Fiordilatte Mozzarella Fiordilatte                 Back to top

Fiordilatte, the real name for cow's Mozzarella in Italy, it is a semi-soft cheese, with creamy texture and a taste that evokes fresh milk.
Generally white in color, may vary to slightly yellow depending on the animal's diet or the season.

Perfect to eat on its own, it is an important ingredient in many Italian recipes and irreplaceable cheese in some as: Caprese, Lasagna and Pizza.
It is traditionally served the day it is made, but can be kept in brine up to 4/5 days,
Store and refrigerate at +4C, on a plate covered with plastic wrap, making sure to remove the water in excess.

Sold packed in brine, average net weight 350 g, each.

Nodini di Fiordilatte Nodini di Fiordilatte                    Back to top

Unique in appearance and taste, these are small knots (nodini) of mozzarella. Their shape makes them particularly suitable to be eaten plain. Is the ideal dish on a hot summer day: a light and healthy meal. Your palate will be captured by the notes of milk which are released to your every bite.
Generally white in color, may vary to slightly yellow depending on the animal's diet or the season.

This product is ideal for all types of antipasti (starters) and salads.
Store and refrigerate at +4C

Treccia di Fiordilatte Treccia di Fiordilatte                   Back to top

Our expert cheese maker, entwist the stretched curd of Mozzarella Fiordilatte in order to obtain the typical braid (treccia) shape from which the product gets its name.
Like the nodini, the paste of the mozzarella braid is slightly firmer with a higher level of elasticity than the mozzarella Fiordilatte.
The weight of the product can vary from 500g to 1kg or more.
Store and refrigerate at +4C, on a plate covered with cling film, making sure to remove the water in excess.

Fiordilatte Rolls The Rolls (Mozzarella's roll stuffed)    Back to top

These rolls, made from sheets of fresh mozzarella, are stuffed with delicious combinations of ingredients that blend in perfect armony with the fresh and delicate taste of the mozzarella.
Fantastic as appetizer, served on bruschetta or with a light dusting of salt and black pepper and a drizzle of extra virgin olive oil. As side dish, accompanied by a mixed salad or simply between two slices of good bread... the choice is yours!

    This cilinder shaped Fiordilatte, it's manufactured as the fresh Fiordilate and has the same quality and characteristics.

    The substantial difference is a lower moisture content that make these Mozzarella more suitable for the preparation of Pizzas, Lasagna or with any other dish that require a melted Mozzarella cheese.

    This product is particularly suited for restaurants and pizzerias.

    Store in a deep freezer at -18C
    Once defrosted, keep refrigerated at at +4C, preferably use within 4/5 days

    Scamorza is a typical Italian cheese, a semi-soft cheese that is like a firm, drier Mozzarella.
    Characteristic pear shaped cheese with an edible thin crust of straw yellow color. It has a compact, slightly elastic structure and a delicate sweet taste, reminiscent of the milk.

    It can be used as an appetizer, to stuff sandwiches, lasagnas, risotto or pizzas. The grilled Scamorza, topped by a slice of Italian ham or mushrooms, really deserves to be tried!

    Regarded as one of the cheeses of ancient tradition, is a product originating in the regions of central Italy.
    It has a semi-soft texture with a creamy firm consistency, providing a flavor that ranges from mild to more intense as it ages.
    Popular as a table cheese, is commonly served in the most classical way... along with cold cut, bread and wine.

    A pleasantly flavorful cheese whose flavor is enhanced by the peppercorns, it has a creamy textured with a mild and balanced flavor ending with a hint of black pepper.

    Ideal as after meal, added to a cheese plate or accompanied with cold cuts and red wine.

    An unusual version of caciotta a variant, created by our master cheese maker, with the addition of Cumin seeds. It is not regarded as a typical Italian product, but as a variant of it.

    Has creamy texture and a mild sweet taste of milk that blends perfectly with the pungent and aromatic taste of Cumin seeds.

    A perfect choice for a cheese platter, to give a different twist to a salad or melted on your favorite burger. Possibly, a cheese to be enjoyed after a spicy Indian, Thai or Nepali meal to keep the theme going.
    Try it accompanied by a full body beer, a dark one!

    This cow's milk cheese made with Fenugreek seeds (Methi in Nepali), is a new version of Caciotta flavored that has been created and developed by our master cheese maker. It is not regarded as a typical Italian product, but as a variant of it.

    Has creamy texture and a mild sweet taste of milk that blends perfectly with the very aromatic scent and a delicious "nutty" aftertaste of Fenugreek.

    It is a perfect choice for a cheese platter, to give a different twist to a salad or melted on your favorite burger.

    Caciotta with Truffle, it's a delicious cheese, stuffed with Acqualagna's summer truffles (Tuber Aestivum Vitt.).
    It is a cheese that has a creamy texture, the flavor is truffled, as well as the taste, which is sweet and fungal at the same time.
    To be tasted by itself or to be used as ingredient. Try it served melted on meats, pizza, lasagna, added to a risotto or to a fondue.

    Note: The truffles we use, grow wild in the Acqualagna's generous territory, which is one of the most famous Italian zones for the collection of truffles.

    The Caciotta with Walnuts is a tasty and delicate cheese.
    It has a creamy texture, almost sweet in flavor with a pleasant aroma and nutty taste, that becomes more intense with the progress of aging.

    Particularly suitable for flavoring fresh salads, as a filling for ravioli or melted in a risotto.

    Himal Grana is a cooked hard cheese, produced with a 50% of skimmed milk and a 50% of whole milk
    Long aged hard cheese, that is characterized by a sharp and tasty flavor. The straw-colored paste has the characteristic graininess is free of holes and, under the pressure of the blade, it breaks into flakes.

    A cheese by a limitless use, can be eaten as a table cheese or used as an ingredient in many typical traditional Italian dishes, appetizers, salads, pastas and so on.

    Ideated and created by our cheese maker at Himal Farm, Himal Grana Truffled it's a perfect blending between the sharp flavor of our Himal Grana cheese and the delicious and intense aroma of Acqualagna's black truffles.
    It is a long aged hard cheese, characterized by a sharp and tasty flavor. The straw-colored paste, with a marked presence of black truffle pieces, is free of holes and has a characteristic graininess that, under the pressure of the blade, it breaks into flakes.

    A real delight for food lovers, can be eaten as a table cheese or used as an ingredient in many typical traditional Italian dishes as: appetizers, salads, risotto or pastas.

    Blue Cheeses

    Himal Blue, is a blue cheese proudly produced by us here, in Nepal.
    This artisanal veined cheese, according to an old Italian tradition, is made by mixing the curd obtained from two different curdling processes. At the beginning of the aging period, that lasts a minimum of 80 days, to create air channels that will allow the mold spores to germinate, a metal rod is inserted and removed repetitively.

    Himal Blue is soft and crumbly, with a sharp and highly aromatic taste. It is an incredibly versatile cheese that can be used in an endless gamma of preparations.

    To fully appreciate the unique flavor of this veined cheese, our guideline is;
    serve at room temperature; either alone or with fruit (apple, grape, pear), spread on Italian bread or focaccia, melted on pizza, risotto or pasta, topped with walnuts or honey and so on.
    Should be accompanied with a robust red wines.
