This recipe require live coal BBQ (low / medium heat for best result).
Place the sausages right on the BBQ, keep the sausages casing intact and the heat low.
Turn it often, so you get a uniform color. Cook for a time that varies depending on the thickness of the sausages and intensity of the heat. You can check the cooking by cutting one end, in case it is still raw, leave it on the grill for a few minutes.
Serve immediately, accompanied with slices of bread or bruschetta.
Suggested side dish: green salad or oven roasted potatoes.
note: cooking time is about 10 to 15 minute, depending on BBQ heat. The sausage should be brownish outside and well cooked inside. Once cooked, the sausages should not be dry, to avoid this, do not pierce or cut the sausages while cooking!
